Cooking Instructions

    • Remove your chicken from the fridge & place in a roasting pan at room temperature for as long as comfortable. It saves cooking time and oven energy.
    • Preheat oven to 180°C / 160°C Fan / Gas 4.
    • Remove trussing band and season your bird liberally with salt inside & out. Insert Pop-Up Timer into the thickest part of the breast.
    • Place in oven at 180°C for approximately 35 minutes per kg (see timing table).
    • As soon as the thickest part of the chicken breast hits 68°C or the timer pops, take the bird out of the oven to rest.
    • Leave the chicken to rest for up to 1 hour uncovered. Minimum 30 minutes. It will continue to cook with the residual heat but not overcook. Leave uncovered for crispy skin!
    • Chicken Tip: There is no need to add butter or oil to a Copas Chicken.

    Superb

Delivery was flawless. Packaging was great and very reusable. It smelled quite strongly when it came out of the packaging but now I realise that is just how real meat smells. It made a beautiful and incredibly tasty Xmas centrepiece and even better stock on Boxing Day. Will repeat. Far better than turkey!

    Cockerel

We are long standing Copas clients but this was the first time with a cockerel. Size was good and it was plump. Easy to cook but the breast meat was tough. The legs were tender though. Juicy and moist all over and lots of juice to go into the gravy. It looked just like your picture when we took it out of the oven. I wonder whether the turkey direction of starting to cook upside down might have helped or not.

1. Remove the chicken from the fridge 30 minutes before cooking.
2. Preheat the oven to 200C (180C Fan)
3. Season the chicken and put in a preheated tray for 20 mins.
4. Then reduce the temp down to 180C (160C Fan), and cook for a further 30 minutes per kg.
5. Check that the juices run clear at the end of time using a skewer to the thickest part of the thigh.
6. If the juices are not clear, cook for a further 10 minutes.
7. When cooked remove and rest for at least 15 minutes.
