Product Description
For those who want something a little smaller we have our bronze crowns, a whole turkey but with legs & dark meat removed. The same delicious award-winning free range whole bronze turkey with plenty of juicy meat and a rich traditional flavour. Our turkeys truly are the cream of the coop, free range, hand plucked and game hung for two weeks.
We choose bronze breed turkeys for their award-winning flavour and texture, but this does mean that sometimes their feather stubs are visible. Our birds are dry plucked by hand, we don’t blast them with water, so you might find a few more feather stubs than on commercial turkeys, but this is normal. Please do not spend time pulling these out as most will burn off during cooking, and those that don’t are much easier to remove once the bird comes out of the oven.
Each bird comes boxed with giblets, recipe leaflet & handy pop-up timer.
Full of flavour and easy to carve, each crown arrives boxed with giblets, recipe leaflet & pop-up timer.
Cooking Instructions
- Remove your turkey from fridge & place in a roasting pan at room temperature for as long as comfortable with. It saves cooking time and oven energy, preheat oven to 180°C / 160°C Fan / Gas 4.
- Remove trussing band and season your bird liberally with salt inside & out. Insert Pop-Up Timer into the thickest part of the breast.
- Place in oven at 180°C for approximately 20 minutes per kg.
- To get the gravy going… Approx. 20-30 mins before end of cook add 600ml-1000ml (depending on size of roasting tray) to roasting pan. This lifts the gnarly bits, makes a tasty jus and helps clean the pan.
- As soon as thickest part of turkey breast hits 68°C or the timer pops, take the turkey out of oven to rest. The oven is now free for roast potatoes!
- Leave turkey to rest for up to 1 hour uncovered. Minimum 30 minutes. Your turkey will continue to cook with the residual heat but not overcook. Don’t cover if you want crispy skin! (Tom Copas doesn’t cover his turkey!).
- Turkey tips: Keep it simple. No need to flip your bird. No need to baste a Copas turkey. No need to cover with foil.

Copas Turkey - 1st Timer!
I decided this year to purchase our turkey through COPAS as quite frankly their school scheme meant that by purchasing one my childrens school financially benefited too - win, win :) My father-in-law cooked the turkey, although a seasons cook/chef, he was so conscious of my spend that he followed the instructions provided! The bird was tend, succulent and there were lots to provide even take home packages. Enjoyed the taste for sure, but whether really tasted hugely different to a supermarket organic/free range, I cannot say for certain. But I know that the experience of buying, contributing back to the community and event was worth it. I would say as first time at the pick up event that you need to help stagger the visits, get more organised with cars and parking, get more stalls in to see dinner based items. Was CHAOS! But we had a lovely dinner, so thank you.

Free Range Crown
I was amazed at the difference from Copas, the skin was wonderfully crips and substantial all over, not like the thin breakable watery supermarket offering (this is not Just Food ...) and the meat deliciously tender and tasty. Best ever Turkey so ordering again for this year as it was packaged beautifully.
